Caramel Pumpkin Chai Bread Pudding

This recipe came about a few weeks ago by my wanting to make something seasonal / sweet with what I already had in the kitchen. I looked up a ton of pumpkin bread pudding recipes on Pinterest and they all were requiring a bunch of extra spices I didn’t own. Then I realized my super delish powdered chai mix from Trader Joes included all the spices I needed and more. So I used that instead and holy mother of all that is fall time magic this Caramel Pumpkin Chai Bread Pudding was born. Seriously, you must make this super easy dessert at least once this season, it will be a hit with anyone who tries it and while baking your home smells soooo goooddd.
Caramel Pumpkin Chai Bread Pudding
Ingredients:
5-6 large slices of sourdough bread cut into cubes
1 cup whole milk
½ cup half & half
¾ cup canned pumpkin
1 cup brown sugar
1 tbsp vanilla extract
1 tbsp cinnamon
2 tbsp powdered chai mix
½ tsp salt
3 eggs
1 stick of butter melted
caramel topping
Directions:
Preheat oven to 350 degrees.
Coat round baking dish with butter or cooking spray.
Toss cubed bread with melted butter and put in baking dish.
In a large mixing bowl add whole milk, half & half, pumpkin, brown sugar, vanilla, cinnamon, powdered chai, salt, and eggs then whisk all together.
Pour wet mixture over buttered bread and let soak for 15 mins.
Drizzle caramel over the top.
Bake for 40 mins or until custard is set.
Add more caramel if you’d like , serve warm with vanilla ice cream!
