I had the pleasure of hosting a get together with the wonderful friends I had made in Paris this Spring / Summer before heading back to Cali. It was a wonderful evening with a mix of entrepreneurs, bloggers, photographers, and even friends who happen to be in town from LA. Everyone enjoyed tons of wine, great curated music from the Sounds Good app ( naturally the SG founders were at the party ) and appetizers I prepared with true American flare (no one at the party had ever had chicken and waffles ). Here are the recipes that were the biggest hits as well as tips on creating the perfect cheese and meat spread!

Salmon Dill Bites

Ingredients:

  • baguette

  • tazikki

  • smoked salmon

  • fresh dill

Directions:

  1. Cut baguette into bite sized slices

  2. Spread a dollop of tazikki on each bread piece.

  3. Top with a bite sized piece of smoked salmon and sprinkle with dill, serve immediately.

Maple Sriracha Chicken + Waffles

Ingredients:

  • waffles

  • fried chicken strips

  • maple syrup

  • sriracha

  • green onion

  • wooden skewers

Directions:

  1. Ok so I found pre-made waffles in the French grocery store that I popped in the toaster to heat up before serving, you could do the same with frozen, or if you’re really awesome and have a waffle maker whip up those babies fresh.

  2. I also purchased already prepared fried chicken that I heated up in the oven but like I said above if you’re fancy and have the time fry up your own chicken strips fresh.

  3. Once the waffles and chicken are hot and ready to go secure the chicken to the waffle with a skewer.

  4. To a bowl of maple syrup add sriracha till desired spicy / sweet ratio is reached for you. I love spicy so when I served these it was basically a half and half mix.

  5. Drizzle chicken and waffles with the spicy syrup and sprinkle with fresh cut green onions, serve immediately.

Tomato Bisque with Grilled Cheese Dunkers

Ingredients:

  • tomato soup

  • heavy cream

  • sea salt

  • garlic and onion powder

  • white bread

  • american cheese slices

  • butter

Directions:

  1. In a sauce pan heat up the desired amount of tomato soup for the amount of people you are serving and add 1:4 ratio of heavy cream to soup.

  2. Add a pinch of sea salt, garlic, and onion powder to taste.

  3. While the soup is simmering on low spread outside of white bread with butter and fill with two american cheese slices.

  4. Cook sandwiches in a skillet till both side are golden brown and cheese inside is melted. Sprinkle with sea salt.

  5. Cut grilled cheese into four longs slices and serve over mini bowls of tomato bisque for dunking, serve immediately.

Meat and Cheese Spread

Putting together the perfect cheese plate and meat spread seems a lot more daunting than it actually is. I am not a huge meat person so I usually just grab four different types of cured meat and it always seems to go well lol. As far as cheese just make sure you have a brie cheese ( topped with some sort of fruit jam ), a sharp cheddar, a blue cheese, and a goat cheese ( topped with honey ). Then serve with sliced baguette pieces, crackers, fruit ( apples, grapes, etc. ), nuts, and olives.
