1 Loaf of Fresh Brioche Bread
Your Favorite Cheese Grated
Chopped Breakfast Ham
Fleur De Sel aka Sea Salt
Sauté chopped breakfast ham in a skillet until fully cooked, drain grease
To skillet with ham add one egg, one handful of grated cheese, 1 tbsp of chopped chives, sea salt, and stir until scrambled egg is cooked and cheese is melted.
Slice four pieces of brioche bread, fill with ham mixture and another handful of grated cheese to form two sandwiches, butter the outside of the bread and fry each side in a pan until cheese is melted and outside of sandwiches are crispy and browned.
In another pan fry two sunny side up eggs in butter and season with sea salt.
Serve Croque Madame sandwiches with fried egg on top sprinkled with chives. One the side serve with a sliced up an avocado topped with lime juice and sea salt.
