✨SHEET PAN GREEK CHICKEN✨

This is one of those easy summer dinners that feels fresh and flavorful but takes barely any effort. We served ours family-style on the patio with pita, low-carb tortillas, and tons of creamy tzatziki!

INGREDIENTS:

- 1.5 lbs boneless skinless chicken thighs
- 2 zucchini, chopped
- 1 bell pepper, chopped
- 1 red onion, chopped
- 4 cups cherry tomatoes
- 1/2 cup kalamata olives
- 6 oz block @kourellas feta cheese, cubed
- 3 tbsp olive oil
- juice of 1 lemon
- fresh parsley for garnish
- @atoriasfamilybakery pita bread
- @mariaandricardos almond flour tortillas
- @fabalishfoods tzatziki

Greek Seasoning:
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper

DIRECTIONS:

1) Preheat oven to 425°. In a small bowl whisk together olive oil, lemon juice, and all seasonings.

2) Add zucchini, bell pepper, red onion, tomatoes, and olives to a large bowl. Pour in half the marinade and toss to coat.

3) Spread veggies onto a lined sheet pan. Nestle chicken thighs onto the pan and season lightly with extra salt and pepper if desired.

4) Add cubes of feta all over the pan, then drizzle everything with remaining marinade. Bake for 25–30 minutes or until chicken is cooked through and veggies are tender. Broil 3–5 minutes at the end for crispy edges.

5) Garnish with fresh parsley and serve with pita bread, low-carb tortillas, and tzatziki!

✨KETO CHICKEN McMUFFINS 🍳✨recipe below👇🏼

These are perfect for meal prep and make the easiest grab-and-go breakfast during the week! High-protein, low-carb, freezer friendly, and seriously taste like fast food without the guilt.

INGREDIENTS:

- @realgoodfoods Lightly Breaded Chicken Breast Filets (23g protein, 3g net carbs)
- @ketoculturebaking Keto English muffins
- cheese slices
- eggs

DIRECTIONS:

1) Air fry chicken patties until crispy.

2) Fry eggs in a buttered skillet (you can crack eggs into a round metal cookie cutter to get the McDonald’s shape).

3) Toast your English muffins and assemble sandwiches.

4) Wrap in foil and store inside zip lock bag.

5) When ready to eat, microwave for a minute or two for the ultimate no-brainer breakfast. Enjoy!

One thing about me…I’m always going to recreate my fast food cravings at home. This easy low-carb @chipotle style burrito bowl has been a staple for YEARS and the crunch from @porkkinggood takes it to a whole different level.

INGREDIENTS:

- @porkkinggood Nacho Cheddar Pork Rinds
- @traderjoes Spicy Mexican-Style Riced Cauliflower
- @traderjoes Salsa Verde Pulled Chicken
- shredded cheese
- sour cream (plus lime juice + splash of cream to make a crema)
- guacamole
- fresh salsa

DIRECTIONS:

1) Sauté the riced cauliflower in a skillet until all the liquid cooks off and add to a bowl.

2) Then heat up the salsa verde chicken in the same skillet and then add it over the cauliflower rice.

3) Load up your bowl with shredded cheese, crema, tons of guac, and fresh salsa.

4) Then use the @porkkinggood pork rinds as your chips for the BEST giant crunchy bites. ENJOY!

This might be my favorite high-protein meal prep ever! Fresh, flavorful, and so easy to throw together for busy weekdays.

I started with my favorite Greek salad from @hungryroot, then added sliced cucumber with tzatziki, then hummus (you could use @bitchinsauce instead for lower carbs) topped with cilantro, pine nuts, and @realgoodfoods Homestyle Meatballs drizzled with balsamic vinegar. YUM!

This tastes like straight-up cake batter, but it’s packed with the benefits of collagen and made with simple, low-carb ingredients. Perfect for a quick snack, late-night treat, or something fun to share with the kids without the sugar crash!

INGREDIENTS:
- 3/4 cup plain Greek yogurt
- 1 scoop of collagen (my favorite is @perfectketo)
- 2 tbsp vanilla sugar-free pudding mix
- dash of vanilla extract
- rainbow sprinkles (use @gooddees sprinkles to keep it keto-friendly)
- fresh strawberries for dipping

DIRECTIONS:

1) Add all the ingredients to a bowl and mix well.

If you’ve been craving fast food but still want to hit your goals, SAVE this one because it comes together in under 10 minutes!

INGREDIENTS:

- @safecatchfoods NEW Wild Tuna Burgers (33g protein, 1 net carb)
- Keto hamburger buns
- American cheese
- @suzies_organics Tartar Sauce
- @mrpapous Greek Olive Oil
- fresh lemon juice

Instructions:

1) Preheat your air fryer to 375°F.

2) Place tuna burgers in the basket and drizzle with olive oil.

3) Air fry for 6–8 minutes, flipping halfway through.

4) After flipping, squeeze fresh lemon juice over each patty.

5) When there’s about 1 minute left, add a full slice of American cheese on each patty and let it melt.

6) Spread a generous amount of tartar sauce on your buns, add the cheesy tuna burger, and stack it up (extra sauce highly recommended). Enjoy!

DIRECTIONS:

1) Cook the shrimp scampi in a skillet per package directions, flipping halfway.

✨A love story…but make it Keto✨recipe below 👇🏼

All you need is the NEW @realgoodfoods Spicy Chicken Strips, a bagged Caesar salad, and a low carb tortilla to make this perfection of a wrap 😍

INGREDIENTS:

- @realgoodfoods Spicy Lightly Breaded Chicken Strips (2 net carbs, 22g protein)
- 1 @realgoodfoods Tortilla (3 net carbs, 10g protein)
- Caesar salad kit
- fresh grated parm (optional but really takes it over the top)

DIRECTIONS:

1) Cook chicken strips in an air fryer according to package directions. While chicken is cooking toss salad with dressing and set aside. Reserve some of the dressing.

2) Place tortilla on a plate and spread with extra dressing, top with dressed salad, crispy chicken, and grate on fresh parmesan.

3) Fold up the bottom first and then the sides. ENJOY!

✨BAKED SUSHI “LASAGNA”✨recipe below👇🏼

If you love sushi but want something easier, cheaper, lower in carbs, and packed with protein… you NEED to try this.

Save this for later 🤍

INGREDIENTS:

- 2 cans @safecatchfoods Wild Pacific Pink Salmon (no need to drain)
- 1 package flake style imitation crab
- 2–3 tbsp mayo
- 2–3 oz cream cheese, softened
- splash of soy sauce
- splash of rice vinegar
- seaweed sheets (I get mine from @traderjoes)
- toasted sesame oil

TOPPING:

- avocado, sliced
- soy sauce
- furikake
- chopped chives
- sriracha

INSTRUCTIONS:

1) Preheat oven to 350°. In a bowl, break up salmon. Break up crab and mix together with the salmon.

2) Add mayo, cream cheese, soy sauce, and rice vinegar. Mix until creamy and taste to make sure you don’t need more of anything. Let chill in the fridge for a bit.

3) Grease baking dish with sesame oil. Layer seaweed sheets, add filling, repeat layers. (You could also get creative and add more ingredients you’d like to layer)

4) Bake for 20 minutes or until slightly golden. Let cool slightly, then top with avocado and sprinkle with soy sauce, furikake, chives, and sriracha. Cut into slices and ENJOY!

Trying the new McDonald’s Big Arch burger… but of course I had to keto-hack it. 🍔

I ordered it without the bun and swapped in my favorite @hero Keto hamburger buns so I could still have the full burger experience without the carb overload. They’re soft, fluffy, and honestly the closest thing I’ve found to a real burger bun.

What’s on the Big Arch Burger:

•2 ¼-lb 100% beef patties
•3 slices of white cheddar cheese
•Shredded lettuce
•Pickle slices
•Slivered onions
•Crispy fried onions
•Big Arch Sauce (tangy sauce with mustard, pickle, and tomato flavors)
•Sesame & poppy seed bun

Here’s the carb breakdown if you’re tracking:

•Big Arch burger (regular with bun): around 59g carbs
•Big Arch with no bun: around 18 carbs
•Big Arch with no bun, no sauce, and no fried onions: around 8 carbs

✨VIRAL COTTAGE CHEESE WRAP + CRISPY CHICKEN CAESAR✨recipe below👇🏼

This recipe is high in protein, low in carbs, and honestly one of the best ways I’ve used the cottage cheese wrap trend yet!

INGREDIENTS:

- @realgoodfoods Lightly Breaded Chicken Breast Chunks (4 net carbs, 23g protein, no seed oils)
- cottage cheese
- shredded parmesan cheese
- 1/2 tsp Italian seasoning
- 1 bag Caesar salad kit

DIRECTIONS:

1) Preheat oven to 375°F and line a baking sheet with parchment paper.

2) Spread cottage cheese in an even rectangle on the parchment paper (about tortilla thickness).

3) Sprinkle shredded parmesan and Italian seasoning evenly over the top. Bake for about 25–30 minutes, or until golden and the wrap is set. Let the cottage cheese wrap cool for a few minutes so it firms up.

4) Toss together your Caesar salad kit. Cook the @realgoodfoods Lightly Breaded Chicken in the air fryer according to package instructions, flipping once, until crispy.

5) Add the salad and chicken to one end of the cooled wrap. Carefully roll the wrap like a burrito.

6) Cut in half and enjoy your crispy, high-protein chicken Caesar wrap!
